Ghostbusters Soup Mint, Pea and Coconut

 

Tree pollen is high today, my eyes and throat itch and I am generally lethargic. Woe is me days usually mean soup in my home. Soup covers pretty much every feeling sorry for myself mood, and usually the thicker the better. I wanted Ghostbuster Soup today. So called because of the bright green gloop resembling something Slimer produced in the film. I know I am really selling this to you right now. I bet you are poised with a pen and some paper in anticipation. Don’t get too stressed with measurements, this is supposed to be for a lazy/comforting day.

You need ( serves 4-6 depending on thickness) 

A blender or processor, large pan, teaspoon, tablespoon, knife, can opener.

Medium potato. Diced. ( I don’t peel- you can, its your gloop)

500g frozen petit pois or 2 tins drained

1 vegetable or chicken stock cube

1/2 tin of coconut milk- full or low fat

Mint sauce

Salt to taste

Method

Fill and boil the kettle and dice the potatoes.

Add the diced potatoes to a large pan with the stock cube and enough boiling water to cover them, bring to the boil, then cover and reduce to medium heat.

After 10 mins add the coconut milk and peas, stir, and leave for another 5 minutes, uncovered, to reduce a little.

Blend, ( I use a stick blender, but you can transfer to blender- be mindful of the hot liquid and the risk of splatters).

Once blended and back in the pan add hot water until you like the consistency, then add 1 tbsp of mint sauce. ( i like 2 tbsp but you can build up to that )

Taste- you can add salt at this point but not before the mint sauce- as that, along with the stock cube, already contains salt, so add a little at a time.

Play around with mint sauce and/or salt till you are happy with it, your taste buds are not mine. I always add an extra drizzle of mint sauce on the top before i tuck in. Well, I say drizzle, but drizzling is a skill I have neither mastered nor worry about. It usually looks like a direct hit from an overhead seagull.

Voila! A bright green bowl of comfort gloop. My serving skills may not be pretty and my camera is not the best, I just want to eat the thing and watch Ghostbusters (1984 version). Oh and its probably best to wear a sloppy cardigan.
